Cuisine Foundations

The most interesting course with 5 or 6 lessons, to learn all the basis of Italian cuisine.

It will be explained and  demonstrated all the technique of cooking of classic cuisine and sample recipes will be showed.

  1. Rice: boiled, creamed, oriental rice
  2. Pasta : egg past, principal sauces and dressing
  3. Meat. Techniques and preparation of classic cuisine: roast and in a casserole
  4. Fish: fundamental techniques of cooking fish, crustaceans an shellfish
  5. Vegetables
  6.  Composition of a menu, technical explanation about how to build a menu in a professional point of view, with time, methods and instruments necessaries for the construction.

 Each student will cook directly one of the dishes proposed, to realize what has been illustrated.

Accademia will provide didactic materials and apron.

At the end of the lesson a certificate signed by Gualtiero Marchesi will be sent.
